Lemon Cupcake Recipe


I was reminded by a reader that I never gave the recipe for these lemon cupcakes.  I will now rectify that omission!  I must say that these lemon cupcakes are out of this world; when you take a bite it’s kind of crunchy from the glaze on top (think Krispy Kreme) and  oh so lemony.  Then, the cake itself – moist, rich citrus goodness.  The cream cheese frosting is …just perfect!

Try this, you won’t be sorry.

THE BEST LEMON CUPCAKES, EVER (adapted from Woodland Dreams)

Cupcake ingredients:

1 box yellow cake mix

1 box instant lemon pudding mix (3.4 oz)

4 large eggs

¾ cup vegetable oil

Cupcake glaze:

3 cups confectioners’ sugar

1/3 cup fresh lemon juice

3 Tbsp vegetable oil

4 Tbsp water

Zest of 1 lemon

Cream Cheese Frosting:

16 oz. cream cheese

1-1/2 cups butter, softened

1 lb. box confectioners’ sugar

1 tsp vanilla

Preheat oven to 350 degrees.  Line muffin tins with cupcake liners; this recipe makes 18-24 cupcakes.  In a large bowl, combine cake mix, pudding mix, eggs and oil with electric mixer until smooth, 1-2 minutes.  Fill each muffin tin HALF WAY (trust me, no more than that or you will have a giant mess) with batter.  Bake for 15-17 minutes.  Carefully, remove from pan.

To make the glaze, sift the confectioners’ sugar into a medium size bowl.  Whisk in lemon juice, zest, oil and water.  Stir until smooth.

While the cupcakes are still a bit warm, brush the tops of the cupcakes with the glaze.  Keep brushing on the  glaze until it is gone.  It will seem like you are putting on too much glaze, but it will all soak in to the cupcake.  When you are finished glazing, set the cupcakes aside to dry for an hour.

After the glaze is set, make the frosting.  Sift the confectioners’ sugar into a bowl and add the softened butter and the vanilla.  Beat this mixture until creamy.  Add the cold cream cheese a bit at a time and beat until fluffy.

Frost the cupcakes and store in an airtight container.

Thanks for the reminder..I hope to be back to my regular baking schedule soon.  We have been busily packing and getting our house ready to sell.  We’re almost done and I am looking forward to our exciting move to Colorado!
